Soft-Boiled Egg with Salted Egg Yolk Sauce

Instructions:
1. Bring a bowl of cold water with a pinch of salt.
2. Gently crack on the blunt end of the eggshell and put them into the cold water.
3. Bring a pot of water to a boil in high heat with a lid covered on top.
4. Stir occasionally to keep the eggs being boiled in the center.
5. After boiling in small heat for 4 minutes, turn off the heat and quickly drain the eggs. Cool them down with cold water.
(If you have a powerful gas burner at home, after boiling the water with high heat, turn to small heat and let it simmer for 4 minutes and 20 seconds. And then drain the eggs.)
6. After cooling down, remove the eggshell and set the eggs aside. Now it’s time to prepare the sauce (Ingredients: 120 ml of soy sauce, 30 ml of rice cooking wine, 80 ml of mirin, and 1 tablespoon of salted egg yolk sauce).
7. Mix the sauce. Pour the sauce into the pot. Add 150ml of water and turn on the heat.
8. Turn off the heat when the sauce starts boiling. After cooling down, put the eggs in the sauce. You can store the eggs and sauce in a seal bag to save space.
9. Seal the bag and put it in the fridge for 1 day. And the dish is done. You may soak the eggs for 1-5 days (the sauce is reusable).
10. Gently cut the eggs open. Here you go, the smooth and delicious soft-boiled egg with salted egg yolk sauce!
